Applesauce Muffins

Hello Dear Friends!

First, I would like to thank you so much for your sweet comments you left on my previous post. Each and every one of the birthday wishes blessed my mama greatly. She really enjoyed reading them!

Before I share the Applesauce Muffin recipe, I would like to give you all an update on my grandmother. As most of you know, she was diagnosed with acute leukemia about two weeks ago. She will be going to a hospital tomorrow to get a heart test, and also a bone marrow biopsy. On Tuesday, she will be going in to start her treatments. She will be in the hospital (which is a few hours away from our home) for a few months. If everything goes smoothly with the treatment, she will then receive a bone marrow transplant. We are praying that the Lord will heal her through this treatment, and that He will lessen her pain through the whole process! Thank you all for your prayers. I would appreciate it if you would continue to pray for my sweet grandmother! Thank you so much!

Now, I would like to share a recipe with you that I made yesterday in my Home Economics class. The recipe comes from A Beka's Family Consumer Sciences book.

~Applesauce Muffins~
Oven Temperature: 350°
Bake Time: 20 Minutes

Ingredients:
• 2 cups flour
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/3 cup packed dark brown sugar
• 2 teaspoons ground cinnamon
• 1/4 cup vegetable oil
• 1 cup chunk-style applesauce
• 1 egg
• 1/2 cup raisins (optional)

Topping Ingredients
• 1/2 teaspoon cinnamon
• 2 tablespoons sugar

1. Preheat oven to 350°
2. Place paper liners in a muffin pan.
3. In small bowl, combine topping ingredients; set aside.
4. Combine dry ingredients, except topping ingredients and raisins; set aside.
5. Combine wet ingredients- oil, applesauce, and egg, mix well.
6. Add wet ingredients to dry, mix just until moistened.
7. Fill cups 2/3 full; sprinkle with topping.
8. Place muffins in the oven; Bake for 20 minutes.
